would it be warm enough to swim and snorkel in Pula in October? And what is the snorkelling like please?

It could be a bit too chilly for swimming, but diving dressed in proper equipment is possible the whole year.

Early Oct will be fine.
I would go snorkeling on Kamenjak cape near Pula (the most southern tip of Istria) since that area is protected.
